It seems like such a simple thing, but Paper is so complex and can be used in many different ways for many different things. My current favourite is Letterpress (see below). Such a great technique for anything from Invitations to Wall Art. It's simple yet beautiful.

My gorgeous friend Jacqueline has a company called redberry design (http://www.redberrydesign.com/) and she creates some amazing pieces including my favourite, Origami Mobiles (see below).

These mobiles look great in a nursery or children's bedroom but personally I think they would look great anywhere in your home.
Lastly, I'm going to have to promote myself and my (self-proclaimed) beautiful greeting cards. These cards are all hand-stitched and can be made with your choice of colour. All cards are 10.5cm x 15cm and can be landscape or portrait. Generally, I make these cards for Birthdays and Baby Showers/New Arrivals, but I have also made them for Christmas (see below) and Easter too.
